Last week was not the best for sticking to our menu. Chronic insomnia meant that I was laid out for much of it, but when I wasn’t we were either entertaining Rick’s parents, dining with new friends or on our way to Toronto to visit friends and shmooze at FanExpo.
The only dishes we got to were the Hunan Tofu and the Chorizo Crusted Cod and Beans with Arugula Pesto
This week I’ve made a point of choosing quick and easy recipes that don’t require a lot of complicated prep.
Monday: N/A – Will probably grab take-out on the way home from Toronto.
