Last week was very lazy for us. I was preoccupied trying to get the website moved over to a new server and finishing up some cupcakes for a wedding, so we ended up eating take out a lot more than we’d intended to. We did manage to make the Teriyaki Mushroom Sauce with Salmon and the Corn, Edamame and Black Bean Salad, both of which were INCREDIBLE. I could eat that salad for every meal, every day and be perfectly happy. Such a keeper.
Summer is finally upon us, so this week the key was finding recipes that didn’t involve the oven. I even went so far as to schedule a salad meal for the middle of the week because I tend to lose my appetite when it gets this hot.
Monday: Pan Fried Tofu with Dark Sweet Soy Sauce with Steamed Rice
Tuesday: Spicy Lemongrass Chicken with Steamed Rice and Miso Cucumber Salad
Wednesday: Cranberry and Avocado Salad (Almonds on the Side)
Thursday: Tikka Masala with Basmati Rice and Vegan Naan
Friday: Five Spice Tilapia with Sweet Corn and Shiitake Mushroom and Arugula Sauté
